One of the most abundant, sustainable species in the UK and amazing for absorbing flavour in cooking. Sourced from the ice cold waters off The Shetland Coast which according to popular opinion makes it the finest around. These extra large 1-1.25 lb fish are best cooked whole with plenty of salt, pepper and lots and lots of herby butter under the grill for 5-6 minutes, it's SO easy to cook. This is our favourite for a good-value mid-week meal.
